3 cups plain flour
1½ cups salad oil
2 cups sugar
3 eggs
3 cups apples, diced fine
1 cup black walnuts, chopped
1 teaspoon salt
1 teaspoon soda
1 teaspoon vanilla

Topping for Apple Cake
1 stick butter or margarine
1 cup light brown sugar
¼ cup cream or canned milk (Carnation or Pet)

Beat together oil, sugar and eggs. Sift flour, salt and soda. Add to oil mixture, then add vanilla. Fold in apples and walnuts. Mix well, Pour into well greased tube pan and bake one hour at 325°.

Topping
Mix well and melt over medium heat in saucepan. Let boil 2 minutes. Pour over hot cake and let stand until absorbed. (You can do this while the cake is still in the pan or just after you turn it out of the pan.)

Other nuts may be used, but the black walnuts make this special. I remember the black walnut tree at the old home place where Lellie lived. I'm sure it furnished nuts for special treats for my great grandparents, Henry Evan (1838-1925) and Sarah Catherine Getzen Mealing (1834-1916) and their children:"Lellie" (Ellie), "Mamie" (Mary), and "Pop" (Drury Joseph or "Drew" 1870-1947), my grandfather.
