4 - 3 ounce packages raspberry or cranberry Jell-O (or mix the two flavors)
1½ cups sugar (or sugar substitute)
2 cups boiling water
½ cup cold water
2 cups fresh cranberries, ground
2 Navel oranges, unpeeled, cored and ground
2 Red Delicious apples, unpeeled, cored and ground
1 - 20 ounce can crushed pineapple, undrained
1 cup chopped pecan (if desired)

Put sugar in bowl, pour boiling water over sugar, then pour in Jell-O and dissolve. (You can use sugar substitute and sugar free Jell-O for all or part of the recipe.). Add cold water, cool until rather thick. (I cut the oranges and apples into eights, take out the core and seeds, cut them up a little more and put them in the Cuisinart with the cranberries and process well.) Combine with the rest of the ingredients, mix well, folding fruit mixture into the Jell-O. Pour into a lightly oiled ring mold. Chill until set. (I chill it overnight.) Fill center of ring with mayonnaise, if desired. Garnish with orange slices.

This was from an old "Southern Living " issue and has been one of our dishes for Thanksgiving and Christmas ever since. You can easily half the recipe. The orange rind and apple peel add an nice texture and flavor to this holiday salad. It keeps well and is great with leftovers.
