1 C sugar
½ C white syrup
1/8 tsp salt

1 cup dry roasted unsalted peanuts, can use raw

2 tsp. butter
1½ tsp. vanilla
1 tsp. baking soda

Directions:
Directions:
Combine first three ingredients in a 2 quart microwave safe glass bowl. If using raw peanuts, add now because need to cook more.

Cook on high for 1 1/2 ~ 2 minutes.

Stir and cook 3 3/4 to 5 minutes more on high

While above is cooking, butter a metal jelly roll pan.

Add butter, peanuts, and vanilla to cooked mixture. Stir. Cook 1 1/2 ~ 2 minutes on high.

Quickly stir in baking soda. (Use fresh baking soda because old baking soda will not make candy brittle).

Quickly pour mixture on to jelly roll pan and spread thin with a wooden or metal spatula.

This works best if one person pours and another spreads.

Cool and break into pieces

Microwave time may vary depending on wattage of your microwave. Shorter time for higher wattage (1000~1200)
