2 c Flour
1 t Soda
1 t Baking Powder
1 t Cinnamon
1/2 t Nutmeg
1/4 c Cocoa
1/4 t Salt
3 lg Eggs
2 c Sugar
1/2 c Vegetable Oil
1/2 c Buttermilk
2 c Zucchini, shredded
1 t Vanilla
1 t Orange Peel
1 c Nuts

Sift together flour, soda, baking powder cinnamon, nutmeg, cocoa & salt. Beat eggs until very light . Gradually beat in sugar. Slowly beat in oil. Mix buttermilk & zucchini. Alternate: mix, dry ingredients, and buttermilk/zucchini into egg mixture. Fold vanilla, orange peel & nuts into batter. Bake in greased & floured 9 x 13 or Bundt pan. Bake 350 40 - 50 minutes. Cool for 10 minutes & then pour Orange Glaze over. (Orange Glaze recipe included in cookbook)
