4 c heavy cream
2 c quick grits
1/4 lb butter
1/4 c grated parmesan cheese
1/4 c grated cheddar cheese
2 c fresh diced seeded tomatoes
1/2 c fresh basil chopped
salt & pepper to taste
12 shakes Tabasco.

Directions:
In a heavy bottom pan bring cream, butter & tomatoes to a boil over high heat. Add grits and basil & stir until thickened. Remove from heat & fold in both cheeses & Tabasco. Season with salt & pepper to taste. Pour into a greased baking dish & bake at 350 degrees until golden brown.

Tip: Core tomatoes & place in boiling water until skin cracks. When cooled, the skin can be removed easily by hand. To seed, simply squeeze the tomatoes by hand over a sink or pot. The seeds will come out with the juice.
