1 c. rice, 1 1/2 c. water, 3 T. oil, 1 clove minced garlic, 1 t. peeled and minced fresh ginger, 4 ounces ham (cut into 1/4 inch cubes), 4 ounces salad shrimp, 2 lightly beaten eggs, 1 t. oil, 1 bunch green onions sliced, 1 T. soy sauce

Cook rice and refrigerate. Heat oil in wok or large skillet over high heat. Add garlic and ginger and cook stirring a few seconds, until golden. Remove and discard ginger, Add cold rice to pan and cook stirring until all is coated with oil. Add ham and shrimp and cook until heated through. Cook eggs, remove and cut into strips. Add to rice with soy sauce and green onions. Serve.
