2 3/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 1/3 c. oil
2 c. sugar
5 eggs
3 c. shredded carrots - firmly packed
1 1/2 c. walnuts


Glaze:
3 tbsp. lemon juice
1 c. powdered sugar

Sift together all dry ingredients. In a large bowl, combine oil and sugar, beat well. Add eggs, 1 at a time beating well after each one. Add flour mixture, 1/3 cup at a time. Stir well, stir in carrots and nuts. Bake 70 minutes at 350 degrees. Let cool 15 minutes. Remove from pan and glaze.
