1 lb. Tortellini
1/4 c. White Vinegar
1 tsp. Dijon mustard
3/4 c. Olive oil
2 Garlic cloves, diced
1 Green pepper, chopped
1 Bunch Scallions, chopped
2 tomatoes, peeled, seeded & Chopped
1/4 c. Chopped parsley
1/2 c. Ham pieces
1/4 c. Grated cheese
Salt and Pepper to taste

Cook tortellini per instructions, rinse and drain. Whisk vinegar and mustard until blended. Add olive oil, salt and pepper and garlic. Mix until blended. Add vegetables and ham, mix well. Add tortelline and cheese. Toss lightly to mix. Cover and chill for several hours or overnight. Garnish with some chopped fresh parsley. Serves about 8 to 10.
