1 c. wheat bran, 1 c. boiling water, 2 1/2 c. all-purpose flour, 2 t. baking soda,
1 t. salt,
1/2 c. vegetable oil, 1 c. brown sugar, 1 c. buttermilk, 2 large eggs, 1 c. raisins or dried cranberries, 1 T. orange zest, 1 mashed banana (optional)

Preheat oven to 400 degrees. Grease two standard 12 muffin pans. Stir wheat bran and boiling water together in a large mixing bowl. Let stand for 10 minutes to allow the bran to absorb the water. Meanwhile, stir flour, baking soda and salt together in another bowl. When the bran mixture has cooled, stir in vegetable oil, borwn sugar and buttermilk. Whisk in eggs. Stir in raisins and orange zest. Add the flour mixture and stir until dry ingredients are moistened. It will be thick. Do not overstir. Add the banana and gently fold it into the batter if you wish. The optional banana adds a nice texture and taste to the muffins. Scoop batter into muffin cups. Bake 15-18 minutes or until lightly browned and a tothpick inserted into a muffin comes out clean. Let cool on cooling rack for 3 minutes. Remove from pans. TIP: Bake only 12 muffins and save the batter in a covered container in your refrigerator. (Omit banana until ready to bake.) When you want the fresh "home-baked" aroma wafting around your house, bake them for another memorable breakfast treat.
