1 tbl. sesame seeds
1 tbl. freshly ground green peppercorns
1 tbl. freshly ground black pepper
1 tbl. grated orange rind
1/2 tsp. sea salt
1 1/2 lbs salmon filets
4 tsp. sweet soy sauce (See note below)

Directions:
Directions:
Preheat oven. Combine sesame seeds, green peppercorns, black pepper, orange rind and salt in a shallow dish. Dredge both sides of salmon in the pepper mixture. Coat large oven-proof skillet and heat over medium flame. Add salmon and cook 2 minutes on each side.

Bake in oven at 400 degrees for 6 minutes or until fish flakes easily. When serving, drizzle fish with soy sauce.

If you don't have sweet soy sauce, use 3 tsp. low-sodium soy sauce mixed with 1 tsp. honey.
