6 c. mashed sweet potatoes (about 4 lbs.)
3/4 c. whole milk or 1/2 c. half and half
3 tbl. butter, softened
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg
1/4c. orange juice
1 tsp. honey mustard
1/2 c. packed brown sugar

Directions:
Preheat broiler. Coat 11 x 7" baking dish with cooking spray.
Cook and mash the sweet potatoes and put in a large bowl. Add all other ingredients except brown sugar and mix well.
Pour potato mixture into baking dish. sprinkle brown sugar evenly over top of potato dish. Broil potato dish about 2 minutes or until sugar melts. Let stand about 5 minutes to allow melted sugar to harden.
