3 cups sugar
3 1/2 cups all-purpose flour
1 1/2 tsp salt
2 tsp baking soda
1 tsp ground cinnamon
1 tsp nutmeg
4 eggs, beaten
2/3 cup water
1 cup vegetable oil
2 cups canned pumpkin
Grated peel of 1 orange
1 cup broken pecan pieces

Preheat oven to 350F.
Mix sugar, salt, baking soda and nutmeg. Stir in beaten eggs and water. Add oil and pumpkin.
Combine, flour, orange peel and pecans. Blend into pumpkin mixture. Pour into a well-greased and floured tube or bundt pan. Bake 1 hour to 1 hour, 15 minutes.
If desired, cake can be glazed with a mixture of 1 cup powdered sugar and 1 Tbsp orange juice.
