2 1/4 Cups sifted flour
1/4 tsp salt
2 tsp baking powder
1/2 cup shortening
1 cup sugar
2 eggs, beaten
1/2 tsp vanilla
1 Tbsp milk


Filling
1/3 Cup sugar
1/3 Cup hot water
1 Cup raisins
1 1/2 tsp butter
Dash salt
Directions:
Directions:
Sift flour, salt and baking powder together. Cream shortening and sugar together, add eggs and milk. Roll out dough and cut in circles

Filling
Combine ingredients and cook until thick. Cool

Place a teaspoon of cooled filling on circle and cover with another circle. Press edges together.

Bake 375º for 12 minutes or until lightly browned

My mother, Pearl McCarry (daughter of Duncan McMillan) made these cookies quite often. One day Oramel Lake (son of Dorothy Lake who was daughter of Rob McMillan) ran away from home and came to visit. Mother gave him a cookie and he had never had a filled cookie before. He sneaked back home to the adjoining farm. No one knew he had run away until he said, "Pearl made a cake that looked just like a pie!"
