1 large onion sliced thin
1/4 cup butter
1 pk Jiffy corn muffin mix
1 egg
1/3 cup milk
4 oz. creamed corn
1 cup sour cream
1/2 tsp. salt
1 cup grated cheddar cheese

Directions:
Directions:
Preheat oven to 425 degrees.
Melt butter in large skillet and saute onions until they are softened. Set aside to cool.
In separate bowl combine muffin mix, egg, milk and creamed corn. Spread in 8x8" greased pan. To cooled onions, add sour cream, salt and half the cheese. Spread onion mixture over muffin mixture.
Sprinkle remaining cheese over top and bake, uncovered, for 30 minutes or until top is golden. Spoon unto plates and serve with a hearty soup for a full meal.
