2 lb stew meat
1/4 c flour
1/4 c butter or oleo
6 cloves garlic, minced
3 c beef broth
12 oz dark mexican beer
1 c green salsa
2 tsp oregano, crushed
1 tsp ground cumin
3 medium potatoes, cubed
14 1/2 oz hominy, drained
8 oz diced green chilies, drained
12 green onions cut into 1" pieces
1/2 c snipped cilantro

Toss stew meat with flour. In a dutch oven, brown the meat, half at a time, in melted oleo. Using a slotted spoon remove meat from pan. Add garlic to pan; cook 1 minute. Add broth, beer, salsa, oregano and cumin. Return meat to pot. Bring to boiling; reduce heat. Cover and simmer about 1 1/4 hours or until meat is nearly tender. Add potatoes; simmer about 30 minutes more or until meat and potatoes are tender. Add hominy, green chilies, green onions, and cilantro; heat through.
