1 1/2 c. long grain rice
1 lb. ground beef
1 med. onion chopped
1/4 c. green peppers
1-32 oz. jar spaghetti sauce
1 egg
16 oz. cottage cheese
8 oz. Mozzarella cheese
1/4 c. Parmesan cheese

Directions:

Preheat oven to 350º.

Cook rice following package directions. Salt optional. Set aside. Brown beef in large skillet, breaking up clumps and pouring off excess fat.

Add onion and green pepper, cook 2 minutes. Add spaghetti sauce.

Coat 13x9x2 baking dish wth cooking spray.

Beat egg lightly in medium bowl. Stir in cottage cheese and mozarella cheese.

Spread half of the meat mixture over bottom of baking dish. Spoon half of the rice evenly over meat, and top with half of the cheese mixture. Repeat layers. Sprinkle with parmesan cheese.

Bake for 50 minutes. Let stand for 10 minutes before serving.
