Ingredients: 2 tablespoons butter 1 cup chopped onion 1 teaspoon minced garlic 2 teaspoons worcestershire sauce 2 can/bottles light beer 2 (14.5 oz) cans chicken broth 1/4 cup and 2 tablespoons cornstarch 4 cups half-and-half 4 cups shredded cheddar cheese

Directions:Melt butter in a 4 1/2 quart soup kettle. Add onion, garlic, and worcestershire sauce; stir well. Add beer and raise heat to high and boil for 3 minutes. Add chicken broth and bring soup back to a boil. Lower the heat to medium-low and simmer.
Combine cornstarch with 3 tablespoons water and stir until smooth; set aside.
Add the half-and-half and cheese to soup. Stir constantly until cheese melts. Stir in cornstarch mixture. Stir constantly until soup is thick, about 2 minutes.
Garnish with bacon bits. |
