1 lb spaghetti, cooked al dante
juice from 2 fresh lemons
1/2 cup evoo
3/4 cup grated locatelli cheese
salt and pepper
1/4 cup chopped parsley and basil
3 cloves garlic, chopped

Directions:
Directions:
While the spaghetti is cooking, saute the garlic in the evoo till tender. Be careful not to burn it. Remove from heat and let cool slightly. Drain the spaghetti reserving 1cup of the pasta water. Place the spaghetti on a serving platter and pour the evoo mixture on top. Add the lemon juice, parsley, basil and grated cheese. Salt and pepper to taste. Toss, adding a bit of the pasta water. Garnish with more fresh herbs and grated cheese.

This is a light and scrumptious dish that my family loves. Make sure that your pasta water is salted enough. It should be like sea water. You can make this dish with other types of pasta, too. It's great with farfalle---(bow ties).
