1 to 1 1/2 lbs. Ground Beef
1 8 oz. can tomatoe sauce
1 16 oz. can diced tomatoes
1 pkg. Taco Seasoning Mix
1 large onion
2 large Bell Peppers
3 cups Shredded Cheddar Cheese
2 cups Grated Monterey Jack Cheese
1 pkg. large Flour Tortillias
Jalapeno Peppers (optional)

Brown Ground Beef. Drain, save drippings. In large sauce pan combine beef, tomatoe sauce, tomatoes, and seasoning mix.Simmer until needed.

Cut Bell Peppers and onion in thin strips and saute in beef drippings, drain, and set aside.

Line a 13 x 9in. cake pan with large Flour Tortillias. Put a layer of beef mixture on top, then a layer of Bell pepper and onion, followed a layer of Cheddar Cheese, and a layer of Monterey Jack Cheese. Place two tortillias on top of this and repeat layers ending with the cheese. Put Jalapeno's on top, if desired and bake at 350 degrees for 30 minutes.

I use Ground Chuck instead of Beef. I also use the Mexican style diced tomatoes and the Mexican blend cheese. Add Sour Cream and it is delicious!
