Potato Salad GF Recipe

Ingredients: 2 lbs. red potatoes 2 T. cider vinegar 2/3 c. sliced scallions 1/2 c. finely chopped celery 1 small jar diced pimintoes (optional) 8 slices sliced bacon, crisply cooked 4 T. sweet pickle relish (Vlasic is GF) 3 hard-boiled eggs (optional) 1 c. mayonnaise (Best is GF) 2 T. sour cream (optional)

Directions:Cut potatoes into 1" cubes. Place in large pot of cold water to cover. Heat to a simmer and then cook for 5-10 minutes until just cooked through but still firm to the bite. Drain and while still hot, gently toss with vinegar. Let sit for 10 minutes. If potatoes are still hot, cool in the refrigerator.
Add rest of the ingredients and stir gently to mix and coat all potatoes. Add additional mayonaise if needed. Salt and pepper to taste.
Cover and refrigerate for at least an hour before serving. |
