Oatmeal Cake Recipe

1 c. oatmeal
1 1/2 c. boiling water
1 c. white sugar
1 c. brown sugar
1 tsp. soda
1/2 c. raisins
1/2 c. shortening
3 eggs, beaten
1 1/3 c. flour
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. nuts

Pour boiling water over oats. Let stand 20 minutes. Cream shortening and sugars; stir in eggs and oatmeal. Add dry ingredients. Mix well. Add nuts and raisins. Bake 35 - 40 minutes at 350 degree.

Cream 1/4 c. margarine and 1/2 c. brown sugar.
Add 1/4 c. cream - I use canned milk.
1 tsp. vanilla
1 can coconut
1/2 c. nuts
Spread on cake right out of oven. Place under broiler until coconut browns. Watch closely, will burn.
