1 C. Shortening 1 C. Warm Water
3 C. Flour 1 tsp. Salt

FILLING OPTIONS:
*Dried apricots cooked w/ a bit of water, corn starch and sugar to taste and soften some.
*Apples, cooked a bit with butter, cinnamon or other spices to taste.
*Canned pie fillings also can be used.

Prepare deep cooking pan with oil for deep-frying.

Mix crust ingredients with slotted spoon. Roll flour mixture onto floured surface to 1/8" thick. Cut into 4" or 5" rounds (a 1 lb. coffee can with both ends cut works well. Grannie used the lid from a large peanut butter jar). Put 1 heaping tablespoon of fruit filling on center of round, fold over and crimp edges together. Drop into deep fry and turn as needed until browned on both sides. Drain on paper towels or brown paper sack, when cool sprinkle with sugar. Or serve warm with vanilla ice cream.

Berchie Koone was Tom's mother. She recently passed away, but I always remember what a treat it was to go into her kitchen and find she and her husband, Ray Koone, making fried pies. It was such a treat, and with all the kids and grandkids around, they never lasted long.
