1 1/2 cups long grain rice (not instant)
2 tbsp butter
2 cups chicken broth
2 tbsp parlsey, chopped
salt
pepper
3 eggs at room temp
grated locatelli cheese

Directions:
Directions:
cook the rice according to package directions. Add the butter and mix well. Pour into a medium sauce pan and add the chicken broth, salt, pepper and parsley. Let come to a simmer. In a large bowl, beat the eggs. Add 1 cup of the rice mixture to the eggs and stir well. Pour the egg mixture into the rice pan and stir. Let simmer for about 4 or 5 minutes. Serve immediately with the grated cheese.
