3 eggs
1 c. oil
2 1/2 c. zucchini, chopped
3 Tbsp. cinnamin
1 Tbsp. vanilla
1 c. nuts (optional)
3 c. flour
1 tsp. salt
1 tsp. baking soda

Directions:

Beat eggs, oil, and sugar until foamy. Mix zucchini and other ingredients by hand. Bake in two loaf pans at 325º for 1 hour or until tooth pick comes out clean.
