Mother's Roasted Chicken and Potatoes Recipe

Ingredients: 10 chicken breasts, bone in, skin on 3 lbs red potatoes, washed, peeled and sliced thick 1 onion (leave whole) 3 cloves garlic, leave whole and unpeeled evoo butter salt fresh ground black pepper 1/4 cup chopped parsley 2 bay leaves

Directions:Preheat oven to 425 Place the chicken breasts in a large roasting pan. Surround with the potatoes. Drizzle with evoo (don't saturate) and then add the salt and pepper. Mix well with hands and arrange the breasts skin side up. Dab each breast with a bit of butter. Place the onion and garlic in the pan; add the bay leaves. Cover tightly with foil. Roast for 30 minutes, remove the foil and continue cooking for another 35 - 45 minutes or until all the ingredients are nicely browned and crispy. Discard the garlic and the onions. Place on a serving platter and garnish with somemore of the fresh herbs. |

Notes: My mother made sauce every Sunday---along with this roasted chicken. It was almost a Sunday staple in our home. The smell alone is enough to satiate your appetite, but wait till you taste it! Don't freak out because you're leaving the skin on the garlic (you can actually leave it on the onion,too) You're just adding more flavor.
