6 med boiling potatoes (2 pounds) 1 1/2 cups mayonnaise
1 tbsp. white vinegar 1 tbsp. yellow mustard
1 tsp. salt 1/2 tsp. pepper
1 medium red onion, chopped 4 hard-cooked eggs, chopped

Directions:
Directions:
Prepare and cook potatoes; cool slightly. Cut potatoes into cubes. Mix mayonnaise, vinegar, mustard, salt and pepper in large bowl. Add potatoes and onion; toss. Stir in eggs. Cover and refrigerate at least four hours to blend flavors and chill.
