1 lb. ground chicken
1 Tbsp. ground chipotle chili powder
2-3 Tbsp. chopped fresh cilantro leaves
Several drops of hot sauce
1 Tbsp. grill seasoning (Montreal Steak Seasoning)
Olive oil

2 red or green peppers, seeded and thinly sliced lengthwise
1 med onion, thinly sliced lengthwise but reserve 1/4 of a piece uncut
1 jalapeno, seeded and chopped
2 c. tomatillo, green chile salsa, or tomato salsa, your choice

Heat grill pan or large skillet over medium high heat. Combine chicken, chili powder, cilantro, hot sauce, and grill seasoning. Divide meat into 4 large patties. Using the rest of the 1/4 reserved onion piece, grate the rest on the burgers. Drizzle the patties with olive oil and cook 6 minutes on each side or until meat is firm and cooked through.

Heat a medium skillet over high heat. Add olive oil, peppers and onions. Stir fry the veggies tossing them with tongs to sear them. Add the jalapeno. Toss and turn the mixture for about 3 minutes. Then add salsa of choice and toss another minute. Place the burgers on bun bottom, top with pepper/onions, and bun top.
