2 T. olive oil
1 small red pepper, cored, seeded and finely chopped
3 green onions, sliced
2 T. low-fat mayo
1 T. lemon juice
1 egg
1 egg white
1 tsp. Dijon style mustard
2 cups fresh bread crumbs
1 can crab meat or 8oz. imitation crab, finely chopped
1/2 cup dry bread crumbs

Heat 1/2 Tbsp. of oil, add red pepper and cook 4 minutes. Add green onion and cook 2 minutes. Remove from heat. Mix mayo, egg, egg white and mustard in medium bowl. Stir in red pepper and onion, fresh crumbs and crab. Shape into 8 - 4 inch cakes. Coat both sides with dry crumbs. Heat 1/2 remaining oil over medium heat. Add crab cakes and cook 5 minutes or until crispy brown. Flip over, add remaining oil and cook until crispy brown.

Serve with lemon and tarter sauce.
