8 skinless, boneless chicken breasts
1 can whole green chilies, cut into 8 strips
1/4 lb Jack cheese, cut into 8 strips
2/3 c dry bread crumbs
1/3 c grated Parmesan cheese
1 t chili powder
1/2 T cilantro
1/2 t garlic powder
1/4 t ground cumin
8 T melted margarine

Directions:
Directions:
Place chicken between waxed paper and pound until 1/4 inch thick. Place a strip of chili and strip of Jack cheese inside each chicken breast. Roll up, tucking in the ends. Secure with toothpicks if needed. Mix breadcrumbs w/ Parmesan cheese and spices, set aside. Dip rolled breasts in melted margarine and then in the crumb mixture. Place seam side down in 9x13 baking pan. Drizzle remaining butter around chicken. For best results, chill at least 4 hours or overnight. Bake at 400 degrees for 20 minutes. Serve with salsa, guacamole, sour cream, shredded cheese, olives, tomatoes, etc.
