2/3 c oil
2/3 c honey
6 c warm water
2 T yeast
2 T salt
15 cups flour (8 cups of wheat flour and 7 cups of white flour)
*If you want white bread, use 16 cups white flour since the white flour is not as dense

Directions:

Grease and flour (or spray with Pam) 4 bread pans.

Combine oil, honey, warm water, and yeast in large mixing bowl. Let sit for 2 minutes. Add salt and stir. Add the 8 cups of wheat flour (or 8 cups white flour if making white bread). Stir well, dough will be very sticky still. Turn mixer off and let dough stand for 10 minutes. Add remaining flour and knead constantly for 10 minutes.

After kneading is done, turn dough out onto floured surface. Dough should not be sticky, but have a smooth quality about it. Knead dough by hand to make a large ball, add small amounts of flour to dough and hands to prevent sticking. Cut dough with knife into 4 sections. Knead each section and form into loaf shape. Place each section into prepared pans - seam side down.

Place pans in a cold oven and turn oven to Warm (or 200 degrees). As soon as oven reaches desired temperature, turn the oven OFF. Allow dough to rise for 20 minutes. Dough will rise above pan level - hopefully several inches higher. Once the dough has risen to desired height, turn oven ON to 350 degrees and set timer for 35 minutes. This cook time includes time needed for oven to get hot.

After cooking, remove pans and cool on cooling rack. If you turn the pans on their sides, the warm bread will not fall as easily. Allow to cool for at least 10 minutes before removing from pans.

These loafs can be frozen for several weeks, but I prefer them fresh. Serve with real butter and honey or homemade jam! YUM YUM!

I've always been afraid of making homemade bread, but this recipe was so easy and simple. I was glad I didn't have to spend all day waiting for my dough to rise. It's a great surprise for the kids to come home from school and have the house smell of fresh bread for their snack.

Also, I recommend a Bosch for this recipe. You can use a KitchenAid if you have the Large capacity size (regular size will not work) with a dough hook.
