2 1/2 cups flour
1 t salt
1 t sugar
2 sticks butter, cut into 1 T pieces, very cold
1/4 to 1/2 cup cold water

Filling:
6 c apples (Idared, Golden Delicious, Jonathan, Granny Smith), peeled and sliced
1 T fresh lemon juice
1/2 c sugar
1/2 c brown sugar, firmly packed
2 T flour
1/2 t ground cinnamon
1/4 t ground nutmeg
2 T butter

Crust:
Prepare the butter pieces and put them in freezer for a few minutes to make sure they are very cold. Put the flour, salt, and sugar into a food processor and pulse once or twice. Add the cold butter and process until the mixture looks grainy. Then slowly, while pulsing, add the water until you can form the dough by pressing it between your fingers. Form dough into a ball. Split into two sections and wrap each with plastic wrap and press flat and chill for 30 minutes before using. Dough can be made ahead for up to one week.

Pie:
Preheat oven to 450 degrees. Combine apples and lemon juice in mixing bowl. Combine sugar, brown sugar, flour, cinnamon, and nutmeg; mix well. Pour sugar mixture over apples, and stir to coat. Spoon filling into pastry-lined pie pan. Dot with butter. Transfer top pastry to top of pie, trimming off excess. Fold edges under to seal, and flute the rim. Cut slits, decorative or not, into top pastry for steam to escape.

Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees and bake for additional 45 minutes.

My father-in-law, Warren Kirkby, has perfected this recipe over the last few years. He is very famous in his area for such wonderful pies-especially his apple pie. He makes it every year for Christmas for our family.
