Dressing:
1 tsp fresh ginger root
1 garlic clove
1/3 cup rice vinegar or white wine vinegar
1/4 cup orange juice
1/4 cup vegetable oil
1 tsp sesame oil (optional)
1 envelope onion soup mix
2 tsp sugar

Salad:
8 ounces bow-tie pasta, cooked and drained
1 cucumber
1/2 cup red bell pepper
1/2 cup red onion
1 pkg fresh baby spinach leaves
2 cans mandarin orange segments
2 cups cooked chicken

Directions:
Directions:
Cook chicken and pasta in advance to make sure they are both cooled before adding remaining ingredients.
