3/4 cup softened butter
1/2 cup confectioner's sugar
1 1/2 cups flour

Filling:
1 package (10 ounces) vanilla baking chips, melted
1/4 cup whipping cream
1 package (8 ounces) cream cheese, softened
1 20 0z can of pineapple (I use fresh)
strawberries / or blackberries, raspberries
1 can (11 oz ) mandarin oranges
2 kiwi

Glaze:
3 tablespoons sugar
2 teaspoons cornstarch
1/2 teaspoon lemon juice
1/2 cup pineapple juice

Directions:
In a mixing bowl, cream butter and sugar. Gradually add flour and mix well. Press into an ungreased tart pan ( 11 inch ) or a pizza pan with sides.
Bake at 300º for 25-30 mins. or until lightly browned. Cool. In a mixing bowl, beat melted chips and cream. Add cream cheese and beat until smooth. Spread over crust. Chill for 30 mins. If using canned pineapple, drain and save 1/2 cup of the juice. Set juice aside.( If using fresh pineapple, buy a small can of pineapple juice.) Arrange berries, pineapple, oranges, kiwi over filling. In a saucepan combine sugar, cornstarch, lemon juice and reserved pineapple juice. Bring to a boil over medium heat. Boil for 2 minutes or until thickened, stirring constantly. Cool: brush over fruit, Chill 1 hour before serving. Store in refrigerator.

I use fresh pineapple and use different fruits that look fresh and ripe. Most of the time I don't bother with the glaze.
