Ingredients: 1 Jar (6oz) Artichoke Hearts (roughly chopped) 1 Cup Crumbled Feta Cheese 2 Tbsp. Capers 1 Tbsp. Chopped Fresh Oregano 5 Sheets Phyllo Pastry Dough 3 Tbsp. Butter (melted)

Directions:Preheat oven to 400º. Combine artichokes, feta cheese, capers, and oregano in small bowl. Season to taste with freshly ground black pepper. Set aside. Stack phyllo pastry sheets evenly (should appear as 1 sheet). Lay pastry sheets so that long side is facing edge of table nearest you. Cut pastry into 6 even strips, about 3 inches wide (each stack of strips makes 5 appetizers). Cover pastry with damp clean towel while not using. Place 1 tsp. artichoke mixture at one corner of each strip. Fold (1 layer at a time) to make small triangle shape; continue folding pastry into triangles until filling is enclosed on all sides. Brush small amount of melted butter at end of pastry to seal. Repeat to make 30 triangles. Place triangles on baking sheet; brush tops with remaining melted butter. Place baking sheet on center rack; bake 10-12 minutes or until pastry is crisp and golden brown. |
