Pastry of 1 crust pie
1 1/2 cups canned pumpkin
1/2 t. cinnamon
1/2 t. nutmeg
1/4 t ground ginger
1/4 t allspice
1/2 cup granulated sugar
1/3 cup brown sugar
1 t. salt
1 1/2 T cornstarch
2 eggs
1 cup evaporated milk
1 cup water
whipped cream (optional)

Directions:

Put pumpkin in a large mixing bowl. In a separate bowl, mix together cinnamon, nutmeg, ginger, allspice, granulated sugar, brown sugar, salt, and cornstarch. Add to the pumpkin and mix until blended. Add eggs and evaporated milk and mix until incorporated. Add water and mix well. Pour into an unbaked pie shell and bake at 375º for 50-60 minutes, or until a knife inserted in the center comes out clean. When cooled, top with whipped cream, if desired.
