Chicken and Shrimp Fettucini Recipe

1 whole large chicken breast
1/2 lb. large shrimp
1/2 lb. spinach
1 lb. mushrooms
1 (12 oz) pkg. fettucini
2 T dry sherry
1 T cornstarch
1/4 t ground ginger
3 T butter

Directions:
Directions:
About 1 hr. before serving, cut chicken breast into 1/2" thick strips. Shell and devein shrimp. Coarsely slice spinach and cook in microwave until done. Cut mushrooms in quarters.

Prepare fettucini as label directs. Drain, keep warm.

Meanwhile, in bowl, toss chicken, shrimp, sherry, cornstarch, ginger and 1/2 t salt; set aside. In 2 qt. saucepan over high heat, heat mushrooms in 3 T melted butter, stirring occasionally. Cover and simmer 5 min.

In 4 qt. saucepan over high heat, in 1/4 C very hot salad oil, cook shrimp-chicken mixture 2 min. or until shrimp is tender and chicken loses its pink color, stirring quickly and constantly.

Spoon fettuccini onto platter, top with spinach and shrimp-chicken mixture. Spoon mushroom sauce over shrimp-chicken mixture. Toss before serving.
