2 Tbs. Dijon mustard
1 tsp. ground thyme
Fresh ground pepper, to taste

Spread pork roast with thin coating of mustard. Sprinkle with thyme and pepper. Roast, uncovered at 375º for 1 1/2 hours.

Regular pepper works fine -- you don't really need fresh ground pepper.
