Ingredients:  
1 box Cheezits, crushed as finely as possible (season with salt,
etc to taste)
4 eggs
1 c. flour
20 Yellow Perch Fillets (butterflied)

Directions:
Directions:
Pat fish fillets dry with paper towel.
Roll fillets in flour to coat (flour helps the breading stick to
the fish better).
Dip fillets in beaten eggs.
Roll fillets in Cheezits crumbs.
Drop into hot oil (350-400 degrees).
Fish are done when breading starts to brown, and the meat
flakes apart.
This is perfect for eating in a sandwich with tartar sauce.
