1 c. unbleached all-purpose flour
3/4 tsp salt
1 egg
1 Tbsp vegetable oil
3 Tbsp water
flour for rolling and dusting

Directions:

Combine all together and mix with fork. You may have to add a bit more liquid as you go. You do not want it soggy. When it all sticks together, let sit for 15 min. Then on a floured surface roll out to 1/4"-1/8" (your preference). Cut in strips wit knife. I usually cut in half so the strips are not so long. Then drop in hot simmering (or low boiling) soup individually.

For a bit more meaty noodle which I like, I add milk instead of water to the recipe and it toughens the noodles up a bit. I also double this for a single soup recipe because my family loves the noodles.
