1 yellow onion, chopped finely
4 celery stalks, split and dice
2 garlic cloves, minced
9-10 cans chicken broth or 2-3 qts. homemade chicken stock
1/2 lb baby carrots, diced
5 med. potatoes, diced
2 tsp oregano
1 tsp basil
2 tsp black pepper
4 boneless, skinless chicken breasts cooked and chopped
Homemade noodles (see added recipe) or 1 bag egg noodles pre-cooked.

Saute the onion, celery and garlic. Add the chicken broth, carrots, and potatoes. Cook until potatoes are tender. Add oregano, basil and pepper. Then add chicken chunks and noodles. Simmer 20 min. or more.

If I have time I do the home-made noodles because they are delicious if you take the time. The egg noodles are quicker. Sometimes I under-cook them originally since they get cooking time durring the 20 min. simmer.
