2 lb zucchini, cubed
1/3 c olive oil
3 garlic cloves, minced
1/4 c parsley, chopped
2 onions, thinly sliced
1/2 c grated Parmesan cheese
3 large eggs
salt & pepper to taste

Directions:
Directions:
Preheat oven to 400º. Lightly oil a 9X12 baking dish. Heat 1/2 of the olive oil in a large sauté pan and cook the zucchini until brown and wilted. Remove from pan. Heat the remaining oil in the sauté pan and saute the onion, garlic and parsley until onion is translucent. Mix the zucchini, Parmesan cheese and onion mixture together. In a bowl, beat the eggs, salt and pepper until well mixed and pour over the vegetable mixture. Pour into the baking dish and bake for 25-30 minutes until the edges are crisp and browned.
