Chilli Cheese Potatoes Recipe

4 x large baking potatos
4 x green or red chillis
12 x tsp of olive or chilli oil
500g x cheddar cheese - mild or mature

Heat your oven to 180ºC.

Grate the cheese.

Take the tops off the chillis and cut into very small pieces. Even grate them if you can. Remove the seeds if you dont like it too hot.

Wash and top and tail each potato.

Cut each potato into slices about 1inch think.

On one side of the potato score with a knife, both ways and place on an overproof tray score side up.

Place a tsp of the oil on each potato and place in the oven for 45 minutes.

Evenly spread the chillis over the top of the potato slices, then cover each one with the cheese.

Place back into the oven for a further 10 minutes until the cheese is nice and melted golden.

remove from oven and serve.

They are great either hot or cold.
