6 chicken breast, boneless skinless, cut into 3rds
1 egg beaten
1/2 cup flour
1/2 tsp curry powder
1 tsp chicken seasoning
1/4 cup melted butter
1(15 oz can) pineapple chunks in juice
1 1/3 cup water
1/4 cup coconut dessert mix or pudding mix
1/4 cup brown sugar
2 T chicken soup base
1/2 tsp curry powder
1/4 tsp black pepper
cooked rice

Directions:
Dip chicken breasts in beaten egg, coat with mixture of flour, curry powder and chicken seasoning.. Place in shallow baking dish. Mix together, melted butter and juice from pineapple chunks, drizzle over chicken. Cover with foil and bake at 350 º for 30 minutes. Remove foil and continue to bake for 30 more minutes. Combine pineapple chunks, water, coconut dessert mix, sugar, chicken soup base, the 1/4 tsp curry powder and black pepper in sauce pan. Cook over medium heat until mixture comes to a boil and thickens slightly, stirring constantly, remove from heat. Serve chicken over rice, top with pineapple coconut mixture.
