4 boneless, skinless chicken breasts
flour for dredging
2 Tbs. butter
2 Tbs. olive oil
3 Tbs. flour
juice of 2 lemons
3 c. chicken broth
salt and pepper to taste

Directions:
Directions:
1. Pound chicken breasts to uniform thickness.
Dredge lightly with flour, shaking off excess.
2. Melt butter and oil until they sizzle. Add
chicken breasts and saute, turning once or
twice. Remove chicken and set aside.
3. Whisk in flour and cook 1 min. until mixture
boils. Add lemon juice to chicken broth and
whisk into saute pan. Reduce heat to simmer.
4. Return chicken to pan, thickening sauce to
desired consistency. Season with salt and
pepper.
5. Serve chicken on rice; spoon sauce on top;
garnish with parsley and lemon slices.
