˝ c. chopped onions
˝ green pepper (chopped)
˝ red pepper (chopped)
1 can picante V8 juice (optional)
Approx. 1 cup salsa
2 c. cooked rice
3 cans black beans (drained)
1 c. shredded chicken (or a small can)
1 c. cheddar cheese (grated)

Directions:
Directions:
Prepare rice. In the meantime, sauté vegetables in a little oil until tender in a large skillet. Add everything else and cook on medium-high heat. Pour over rice and sprinkle cheese on top. Serve with tortilla chips.
