3 egg whites
1 tsp. vanilla
1 tsp. almond extract
1/4 tsp. salt
2 c. powdered sugar
2 1/2 c. fine grated coconut (Shredded or flaked may be "grated" in blender or food processor)

Directions:
Line cookie sheets with baking parchment or waxed paper or grease well. In large mixing bowl, combine egg whites, vanilla, almond extract, and salt. Beat on highest speed until white and foamy. Gradually add powdered sugar; beat until stiff and glossy. Do not underbeat. Gently fold in coconut. Drop by spoonfuls onto prepared cookie sheets. Bake at 325º for 15-20 minutes until lightly browned. Remove from pan immediately.
