1/2-Cup Brer Rabbit Molasses (If using homemade molasses, use 1/2 cup and 1/4 cup Brer Rabbit)
3/4 Cup Sugar
1 Egg
3/4 Cup Lard (room temperature) - (not Crisco -- pure lard)
3/4 Cup Buttermilk
1/2 Tsp. Salt
3 Tsp. Cinnamon
2 Tsp. Ginger
2 Tsp. Soda
2 Cups All-Purpose Flour (add 1/2 cup at a time)
1 Tsp. Vanilla Flavoring

Filling:
50 Ozs. Apple Sauce (Better if you cook down dried apples)
2 Cups Sugar
1 Tbl. Cinnamon

Mix molasses, sugar, lard and egg in large bowl by hand until well blended. Add milk. Sift together flour, cinnamon, ginger, soda and salt. Add to mixture a little at a time. If not stiff enough to handle, add more flour. Add vanilla.

Place in large bowl of flour and knead about one minute (folding up and in). Divide into six balls.

Grease 9" round cake pans, I use oil. Use waxed paper (oiled) in pan. Sprinkle with flour to prevent sticking (cut wax paper the size of cake pan). Press into pan.

Bake 350 degrees about 12 to 15 minutes or until layer begins to brown around edges. Turn out on paper towels; remove waxed paper when cool.

Filling:
Combine filling ingredients and cook until dark and thick. (When cooking down apples, be careful. They pop all over you and the stove.)
Spread filling between layers and press layers together when completed stacking. Put some oil on paper towel and rub top of cake. Then smooth around sides to spread filling.
