2 1/2 c. sugar
1/2 c light corn syrup
1/2 c. water
1/4 tsp. salt
2 egg whites, at room temperature
1 tsp. vanilla
1 c. coarsely chopped walnuts

Directions:
Line a 9 inch square metal pan with foil; grease foil. Mix sugar, corn syrup, water and salt in a 3 qt saucepan. Stir over medium heat until sugar is dissolved. Continue cooking without stirring until mixture reaches the firm ball stage (248º on candy thermometer) or a small amount dropped in cold water forms a ball. Meanwhile in a large bowl beat egg whies with electric mixer until stiff. Slowly pour in 1/2 the hot syrup, beating constantly. Cook remaining syrup without stirring (watch carefully; temperature is crucial) to soft-crack stage (272º on candy thermometer) or a small amount dropped in cold water separates into hard strands. Slowly add to first mixture, beating constantly until mixture holds its shape; fold in vanilla and nuts. Spread in prepared pan. Decorate with cherry pieces. Let stand at room temperature until firm. Cut in squares with sharp knife dipped in hot water.
