1 large head fresh Cauliflower
1 large cucumber
1 large carrot
1 8 oz. package shredded Cheddar Cheese
1 package Ranch Salad Dressing

Directions:
Directions:
In a large bowl, break cauliflower into small flowerets. Mix in cucumber cut lengthwise, take out seeds, and cut into bite size pieces. Add carrot (shredded), and package of cheese.
Mix Ranch dressing mix according to package. Pour over cauliflower mixture, stir and cover tightly for 4 hours or overnight.

Recipe can easily be doubled. Good for picnics. And since I'm a 3rd grade teacher the name of the salad is quite a hit with my class, as is the creative spelling!
