Perky Turkey with Basil and Pasta Recipe

Ingredients: - 1 ½ lb of ground Turkey Preferably dark meat for a more meaty flavor (or ground chicken or ground pork) - 1 tablespoon of olive oil or peanut oil - 1lb of rice noodles (whatever kinds you like) or angel hair pasta - 1 bunch of fresh Thai basil (if you can find them) or regular basil - Half of a red onion diced small - 1 bell pepper (yellow or orange) diced - 1 Jalepenos pepper dices (take out the seeds if you want it less spicy) - 2 large garlic cloves diced fine - 1 cup of snow peas or green beans - Salt and Pepper - A handful of chopped cilantro
Sauce: - 1 teaspoon (or more if you like spicy) of Chili garlic sauce or it’s some times called Sambal Olek - A quarter cup of chicken stock - 1 tablespoon of Ponzu citrus seasoning soy sauce (made by Kikoman) If you cannot find this sauce, you can substitute with 1 tablespoon of low sodium soy sauce and a table spoon of lemon juice - 1 tablespoon of fish sauce (if you cannot find this sauce, you can substitute with a teaspoon of anchovy paste) - 1 teaspoon of brown sugar

Directions:- Combine all of the ingredients for the sauce and put aside - Cook the pasta as instructed on the package. Be sure it’s al dante. Don’t over cook your pasta - In a large hot skillet or dutch oven, brown the meat with the chopped garlic in high heat. Lower it to medium when meat starts to brown - Add a pinch of salt and a half a teaspoon of black pepper - Stir in the onions, bell peppers and jalepenos - Once the onion is translucent, then add the veggies - Let the veggies cook for a few minutes then add the sauce. Then add the basil. - This dish should be saucy so if it’s dry, you can add a little bit more chicken stock. Taste the dish to make sure it has the right combination of saltiness and spice. - Place the pasta in a large pasta serving bowl and toss it with the meat sauce. Top it with cilantro and dig in! ;-) |

Notes: My husband John loves the traditional Thai dish called Pad Grapow (Pad = Stir fry and Grapow = Basil) which consists of various meats cooked with Thai basil and chili. My version is a cross between the traditional recipe and some of my own unique ingredients.
